Salad Topping!


2 Raspberry Lemon Bars
2 tablespoons olive oil
2 tablespoons fresh lemon juice
1 clove garlic, minced
Pinch of salt
Freshly ground black pepper, to taste
Fresh green salad of your choice (lettuce, spinach, arugula, etc.)
Optional toppings: sliced almonds, crumbled feta cheese, diced avocado, cherry tomatoes, sliced cucumber, etc.

In a blender or food processor, combine the Raspberry Lemon Bars, olive oil, lemon juice, minced garlic, salt, and black pepper. Blend until smooth and creamy. If needed, add a little water to achieve your desired consistency.

Prepare your fresh green salad by washing and drying the greens. Place them in a large salad bowl.

Drizzle the topper over the salad. Start with a small amount and add more as needed, tossing the salad gently to coat the greens evenly.

Taste the salad and adjust the seasoning with additional salt and pepper if desired.

Optional: Add your choice of additional toppings such as sliced almonds, crumbled feta cheese, diced avocado, cherry tomatoes, or sliced cucumber to enhance the flavors and textures of the salad.

Serve the salad immediately and enjoy!

Note: The topper can be stored in an airtight container in the refrigerator for up to one week. Just give it a good stir before using it again, as it may thicken slightly when chilled.
