Chickpea Cookie Dough
Great on it's own or as a dip!
Ingredients:
1 can chickpeas (rinse well to rid of bean flavor)
1/4 cup almond butter
3 tablespoons maple syrup
3 tablespoons nut/oat flour
2 teaspoons vanilla extract
1 pinch of salt
1/2 cup chocolate chips (we like the mini's!)
Instructions:
1. Drain and rinse your chickpeas thoroughly.
2. Set the chocolate chips aside, add the remaining ingredients to a food processor. Process until thick, scrape down your sides as necessary.
3. Place the mixture into a large bowl and fold in your chocolate chips.
4. Allow mixture to harden in the fridge before serving and up to 5 days in an airtight container.
